Buffalo Drumsticks

I love a good Buffalo chicken wing but sometimes I want a bit more meat on the bone. These Buffalo drumsticks are drenched in honey butter, baked golden brown, then smothered hot sauce.

So the big question…how spicy are they? If we’re using the hot wing scale of mild medium or hot…these are medium. You definitely know you’re eating Buffalo sauce with that kick of heat with each bite, but these won’t leave you running for water or milk to relieve the burn.

For me that’s the perfect hot sauce. Let’s me enjoy the flavor and sensation but not making my eyes water from the spice! If there’s one thing I don’t like it tear streaks in my foundation.

INGREDIENTS

Here’s what you’ll need the make this recipe! The great thing about these is it’s affordable. One pack of drumsticks is usually around $4 or even less and the rest of the ingredients I always have on hand.

  • Drumsticks
  • Butter
  • Bottled hot sauce
  • Honey
  • Worcestershire sauce
  • Seasonings: garlic powder, salt, pepper

And as always when I’m cooking chicken I recommend getting a digital meat thermometer if you don’t have one. Never over or under cook chicken again!

WHAT TO SERVE WITH BUFFALO DRUMSTICKS

While these drums bake up in the oven you can get some easy sides ready! Here are some ideas to complete the dinner.

  • Mashed potatoes
  • Fries or sweet potato fries
  • Macaroni salad or potato salad
  • Mac and cheese
  • Corn or creamed corn
  • Green beans
  • Cornbread
  • Au gratin potatoes

You could dip these in ranch but I chose to make a gorgonzola cream sauce which is absolute perfect for me! The creamy helps balance the heat and using gorgonzola is a little more mild that blue cheese.

Chicken drumsticks baked in a honey butter sauce then smothered with a medium spicy hot sauce. Like a hot wing but more meat on the bone!

Ingredients

4 chicken drumsticks, skin removed
2 and 1/2 tablespoons butter
3 tablespoons honey
1 and 1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper

For the hot sauce
1/3 cup hot sauce
2 tablespoons butter
1 teaspoon Worcestershire sauce

For the gorgonzola cream dip
1/4 cup gorgonzola crumbles
2 and 1/2 tablespoons sour cream
1 and 1/2 tablespoons milk (or half & half)
1 teaspoon lemon juice
1/2 teaspoon lemon zest
Pepper to taste

Instructions

1. Preheat the oven to 425 degrees. Line a casserole dish with heavy duty foil, making sure to not break any hole in the foil.

2. Combine the garlic powder, salt, and pepper. I like to cut two slits in each drumstick to really make sure the seasoning and sauces get inside. Coat the chicken with the dry rub.

3. Melt the 2 and 1/2 tablespoons of butter and mix in the honey, pour over the drumsticks, then give a few extra drizzles of the honey over the chicken. Bake for 35 minutes. Use a digital thermometer to confirm internal temperature of 165 degrees is reached. Remove from the oven and let rest for 5 minutes.

5. While the chicken is cooking and there is 15 minutes left on the bake time, make the hot sauce. In a small pot add the butter, hot sauce, and Worcestershire sauce. Heat just until melted then pour into a large mixing bowl. Set aside until the chicken is done. As the sauce cools it will thicken a bit and be the perfect Buffalo sauce consistency.

6. To make the gorgonzola cream sauce add all ingredients to a bowl and use a fork to mash and mix the cheese crumbles into a smoother creamy sauce. If you want a sauce that’s more pourable just add a bit more milk. Set aside until the chicken is ready.

7. After the drumsticks have rested for 5 minutes place them in a large bowl and cover with the Buffalo sauce to make sure every piece is generously coated. Serve with the gorgonzola sauce or your dipping sauce of choice.
