When it comes to any get together or game day, you’ve got to have an appetizer that’s Buffalo chicken! These Buffalo Chicken Bites have all the classic flavors of Buffalo chicken in an easy to eat and mess-free phyllo cup bite!

Notes: This recipe is super quick and easy! By using rotisserie chicken you only need about 10 minutes to mix the ingredients then bake!

These Buffalo chicken bites are sure to be a hit at a party! Just a few simple ingredients, mix them all together, fill your phyllo cups, then bake! From start to finish you’ll only need about 20 minutes.

So of course with anything Buffalo chicken we need to talk about the most important ingredient: the hot sauce!

Get yourself Texas Pete®​ Original Hot Sauce! You’ll use 1/3 cup for this recipe, but you can add a few tablespoons more if you like it extra spicy!

Texas Pete®​ Original Hot Sauce is smooth and packs that classic hot sauce heat you’re looking for. It’s bold and adds the robust heat flavor to any dish. It’s what I used for this recipe, and I always make sure I keep a bottle (or two) stocked in my fridge. Find it at a retailer near you.

I love using rotisserie chicken to cut down on the cooking time and make recipes just a bit easier. It’s best to buy the chicken that same day you need to use it for the best quality, but I’ve also bought it the day before and just stored it in the fridge.

You’ll lose some of the moisture from the meat, but something to keep in mind if you’re not able to run out to the store the day you want to make these bites!

I topped these with scallions before serving them and love the flavor that added. You could also add some finely diced celery as well if you’re a celery fan!

Buffalo chicken bites make the perfect addition to any get together! All the spicy flavors of Buffalo chicken served in an easy to eat phyllo cup.

Ingredients

3 boxes of phyllo cups (15 cups per box, 45 cups total)
2 cups shredded rotisserie chicken
1 cup Mozzarella cheese
4 ounces softened cream cheese
1/4 cup ranch dressing
1/3 cup + 1 tablespoon Texas Pete®​ Original Hot Sauce
1/2 teaspoon garlic powder
Crumbled blue cheese
Diced scallions

Instructions

1. Preheat oven to 350 degrees. Place the phyllo cups on large baking sheets.

2. In a large bowl, combine the chicken and the cream cheese. Then mix in the ranch, hot sauce, garlic powder and Mozzarella cheese. Fill each phyllo cup with some of this Buffalo chicken mixture. Top each with as much crumbled blue cheese as you’d like. Bake for 15 minutes.

3. To serve top with diced scallions and dip in ranch.

    Can you make these a day ahead?

      You could make the Buffalo chicken mix ahead of time and store in the fridge, but don’t assemble in the phyllo cups or pre-bake them ahead of time. The phyllo cups will get really soggy and soft after being stored in the fridge.
