If you’ve ever had a cookie pie before you know it’s typically baked as a large chocolate chip cookie. I got to thinking one day, “What if I combine cookie pie and banana bread to make a banana cookie pie?” I’m not kidding. While half of the racing thoughts in my head are anxiety related the other half are all recipe ideas.
I tested this a few times to finally land on this ultimate banana split cookie pie texture. It’s soft and moist from the bananas, but also has that cookie texture from the 2 cups of flour. The sprinkles add a whimsical pop of color, then top the baked pie will all your favorite banana split toppings.

STORAGE AND REHEATING
Leftovers should be stored covered in foil or in an airtight container in the fridge for up to 5 days. When I bake with fresh fruits I always keep those chilled to maintain their freshness and avoid any spoiling of the fruit.
I actually really enjoy a slice chilled right out of the fridge, but for that warm fresh from the oven taste just pop the slice in the microwave for 10-15 seconds then top with ice cream.

Ingredients
2 cups all purpose flour
2 very ripe bananas
1 stick butter, melted
1/2 cup dark brown sugar
1 egg
2 teaspoons vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1 bar dark chocolate, chopped (I use a bar of either 70% or 72% cocoa)
1/4 cup rainbow sprinkles
Instructions
1. Prepare a glass pie pan by spraying it with cooking spray. Preheat oven to 350 degrees.
2. In a large bowl mash the ripe bananas until smooth.
3. In another bowl combine the flour, salt, baking soda, and cinnamon.
4. Combine the melted butter with the brown sugar then pour over the mashed bananas and stir. Add in the egg and vanilla extract and stir until evenly blended.
5. Add half of the dry ingredients into the wet and stir. Pour in the chopped dark chocolate and stir, then the remaining dry ingredients and stir until the cookie dough has formed.
6. Pour into the prepared pie plate and bake 25-30minutes. For a very fudgy “medium rare” cookie pie bake for the 25 minutes, and for a more “well done” cookie bake for 30 minutes.
7. Allow to cool in the pie plate for at least 1 hour before serving. Top each slice with all your favorite banana split toppings like ice cream, chocolate syrup, caramel syrup, sprinkles, cherries, and more!
Notes
If using frozen bananas allow them to fully thaw and come to room temperature before baking. Avoid adding any ice chips from the exterior frozen banana peels.
