Stove Top Spinach Dip

There are a few foods I can eat over and over again and never get bored. The first is buffalo chicken dip. The second would be spinach dip. We’re all familiar with the typical baked cheesy spinach dip, but I set out to create a flavorful version that cooks up in a pan on the stove top! My stove top spinach dip is the most delicious creamy spinach dip you’ll ever have!

I can’t claim this is the best spinach dip you’ll have without back that up with some facts. So what makes this the best ever? First, you start by melting butter and adding lots of fresh grated garlic and then adding some white wine. That combination of garlic and wine really set the flavor foundation.

Second, this doesn’t use your typical cheese blend of Parmesan and mozzarella…here I’m using Parmesan and asiago. The 1/2 cup of asiago cheese levels up the flavor and gives this a restaurant quality taste.

Next, top this with some fresh diced tomatoes! The cool refreshing tomato helps balances the rich and cheesy dip.

And finally, this being made on the stove top means this is quick and ready in less than 15 minutes! Unlike baked recipes which need close to 30 minutes in the oven, this stove top version can be ready from prep to finished in under 25 minutes.

STORAGE AND REHEATING TIPS

This is best served warm right from the pan, but you can make this a few days ahead and store in the fridge for up to 3 days.

You can reheat the dip in a pan on the stove or in the microwave. Add a bit more light cream to get this back to a “saucy” consistency and give a taste to make sure you don’t need to infuse some more flavor back with some extra salt, pepper, and garlic powder. Adding more cream might mean you need to bump up the seasonings to get all the robust flavors but to where they should be.

  • Crackers, I love table water crackers
  • Cucumber slices

Stove top spinach dip is a super flavorful spinach dip that cooks up in a pan, no oven required! A creamy spinach dip made with lots of garlic, a bit of white wine, and asiago cheese…this will be your new favorite party dip!

Ingredients

1/2 tablespoon butter
3 cloves of garlic, grated
2 tablespoons white wine
3/4 cup cooked and drained frozen spinach
1 and 1/4 cups light cream
2 oz softened cream cheese
1/2 cup shredded asiago cheese
1/4 cup fresh shredded Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
Optional diced roma tomatoes for garnish

Instructions

1. In a large pan melt the butter and add the grated garlic. Cook over medium for about 30 seconds, then add the wine and cook for an additional 30 seconds.

2. Add in the light cream and cook for 3 minutes to thicken, reduce heat to medium-low if it gets too bubbly. Add in the cream cheese, asiago, and parmesan cheese and stir to melt. Season with the salt, pepper, and garlic powder. Lastly, stir in the cooked spinach.

3. Turn off heat and continue to stir until all cheeses are melted and the spinach is completely blended into the dip. Serve and enjoy!

Garnish with more cheeses and diced fresh tomatoes for the perfect bite.
