Spinach Dip Bites

Calling all spinach dip lovers! Spinach dip bites would be the perfect snack addition to any party menu. Make a creamy spinach dip with asiago cheese and then add to crispy phyllo cups and bake! These are the ideal combination of cheesy, savory, and crunchy!

WHY YOU’LL LOVE THESE SPINACH DIP BITES

When I’m creating a recipe one of the most important things to me besides taste is texture. What I love about spinach dip is that creamy dip paired with the crunch of the tortilla chip. So to get that here I decided to use phyllo cups as the little vessel for the dip.

Phyllo cups give the crunch just like a chip and also make these little bites the cutest addition to a snack table. You’ll find them in the freezer aisle of the grocery store! Usually they are actually in the freezer door, but sometimes they’ve also been displayed in the aisle.

You’ll also love these spinach bites because this isn’t your typical spinach dip. I make my dip here with a blend of asiago and parmesan cheeses, and little white wine, and fresh garlic. The flavor is out of this world!

MAKE AHEAD AND STORAGE

I don’t recommend filling the cups and storing in the fridge because all the moisture from the dip will make the phyllo very soggy…and no one wants a soggy and sad spinach dip bite!

If you want to save time or do a little pre-party prep you can make the dip ahead of time and store in the fridge. When you’re ready to make the bites, remove the dip from the fridge and allow to come to room temperature, then fill the phyllo cups and bake.

Once they have baked for 10 minutes at 350 degrees just allow them to cool for afew minutes (no burnt tongues here!) then serve! These whip up in about 20 minutes from prep to finish so these really are a great fast appetizer to serve!

Calling all spinach dip lovers! These spinach dip bites are made with a creamy asiago cheese spinach dip and then filled into crispy phyllo cups. These would be a hit at your next gathering!

Ingredients

2 boxes phyllo cups (30 cups total)
2 oz cream cheese
1/2 tablespoon butter
1/2 tablespoon flour
3 cloves garlic, grated
2 tablespoons white wine
10 oz block of frozen spinach, cooked and drained
3/4 cup light cream
1/2 cup fresh grated asiago cheese
1/4 cup fresh grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Instructions

1. Preheat your oven to 350 degrees. Add the phyllo cups to a baking sheet.

2. Cook the spinach according to package directions, strain to remove excess water, then measure out 1 cup.

3. To make the dip, melt the butter and add the grated garlic. Cook for 1 minute. Add the flour and whisk to combine into the butter, then add the white wine. Cook for 30 seconds.

4. Pour in the light cream and heat over medium-low for about 3 minutes. Add the cream cheese and the parmesan and asiago cheeses. Cook over medium-low heat until the cheeses have blended completely into the cream sauce. Season with the salt, pepper, and garlic powder. Turn off the heat then stir in the spinach.

5. Fill the phyllo cups with the spinach dip, and if you’d like you can add a little more parmesan on top of each.

6. Bake for 10 minutes.

Allow to cool slightly then serve!

Notes

Phyllo cups are usually found in the freezer section of the grocery store. Sometimes I find them in the freezer door, and sometimes they are on a display in the aisle.
