Spinach Dip Bites

Calling all spinach dip lovers! These spinach dip bites are made with a creamy asiago cheese spinach dip and then filled into crispy phyllo cups. These would be a hit at your next gathering!

Ingredients

2 boxes phyllo cups (30 cups total)
2 oz cream cheese
1/2 tablespoon butter
1/2 tablespoon flour
3 cloves garlic, grated
2 tablespoons white wine
10 oz block of frozen spinach, cooked and drained
3/4 cup light cream
1/2 cup fresh grated asiago cheese
1/4 cup fresh grated Parmesan cheese
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper

Instructions

1. Preheat your oven to 350 degrees. Add the phyllo cups to a baking sheet.

2. Cook the spinach according to package directions, strain to remove excess water, then measure out 1 cup.

3. To make the dip, melt the butter and add the grated garlic. Cook for 1 minute. Add the flour and whisk to combine into the butter, then add the white wine. Cook for 30 seconds.

4. Pour in the light cream and heat over medium-low for about 3 minutes. Add the cream cheese and the parmesan and asiago cheeses. Cook over medium-low heat until the cheeses have blended completely into the cream sauce. Season with the salt, pepper, and garlic powder. Turn off the heat then stir in the spinach.

5. Fill the phyllo cups with the spinach dip, and if you’d like you can add a little more parmesan on top of each.

6. Bake for 10 minutes.

Allow to cool slightly then serve!

Notes

Phyllo cups are usually found in the freezer section of the grocery store. Sometimes I find them in the freezer door, and sometimes they are on a display in the aisle.
