Banana Blueberry Oat Muffins

All good mornings start with a cup of coffee. All perfect mornings start with a cup of coffee and a delicious home baked treat. Make sure you start your mornings this week with these banana blueberry oat muffins.

These banana blueberry oat muffins are a great way to use up ripe bananas in a way that’s not just another banana bread. And those fresh blueberries add such a beautiful pop of color.

INGREDIENTS

Here’s what you need from your fridge and pantry to make these muffins this week!

DRY INGREDIENTS

  • All purpose flour
  • White and dark brown sugar
  • Baking soda
  • Baking powder
  • Salt
  • Fresh blueberries
  • Quick Oats
  • Ripe bananas

WET INGREDIENTS

  • Vegetable oil
  • Vanilla extract
  • Eggs

Even if you’re not a regular baker, muffins are the best morning baked good you can make because they are so easy! These are as simple as:

Step 1: Mash the bananas then stir in the sugars, followed by the vanillas, egg, and oil.
Step 2: In another bowl, combine the flour, quick oats, salt, baking soda, and baking powder.
Step 3: Combine the wet and dry ingredients then add the blueberries.
Step 4: Add to your muffin liners and bake!

RECIPE TIPS

  • Measure carefully, especially with the flour. Too much flour could create a drier muffin.
  • Don’t overmix. Mix just enough to incorporate the ingredients together, but there’s no need to keep mixing beyond that. Overmixing can lead to tough muffins…no thank you!
  • Use muffin liners. Not only are they available in lots of cute patters and fun colors, but it helps cut down on the cleaning of the muffin pan! These are my favorite muffin liners to use, makes me feel like I have my own little bakery.
  • For a tall muffin with an appealing muffin top, fill to the top of the muffin pan. Some may recommend only 2/3 of the way to the top…but I go all the way for a nice generous muffin.
  • Use very ripe bananas to bring out the best banana flavor.

A delightful morning muffin loaded with ripe bananas, fresh blueberries, and quick oats.

Ingredients

2 ripe bananas
2 cups all purpose flour
1 and 1/4 cup fresh blueberries
1 cup quick oats
1 cup white sugar
1/2 cup vegetable oil
4 tablespoons dark brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

Instructions

1. Preheat your oven to 350 degrees. Prepare your muffin tin by spraying with cooking spray or using muffin liners.

2. In a large bowl mash the bananas, mix in both white and brown sugars. Then add in the vanilla, oil, and eggs.

3. In another bowl combine the flour, quick oats, baking soda, baking powder, and salt.

4. Mix together the dry and wet ingredients then stir in the blueberries, be careful not to overmix.

5. Add the batter to the muffin liners then bake for 23-25 minutes.
