Spicy Pimento Cheese

Pimento cheese is a classic easy cheese spread that you can mix up in less than 10 minutes! This recipe adds cayenne pepper and chipotle powder to make spicy pimento cheese.

This pimento cheese is going to be you’re newest go-to party dip! First, it literally takes less than 10 minutes to mix everything together. Second, there’s no oven needed! As a cold cheese spread this is perfect for when you need to have the oven going for other appetizers or the main dish. And last…it’s SO good! The combination of the garlic powder, smoked paprika, cayenne pepper and chipotle powder makes this pimento cheese hard to stop eating!

INGREDIENTS AND SUPPLIES

Here’s what you need to make this spicy pimento cheese!

  • Cheese. Since this is the main ingredient go for really good quality and shred it yourself! Make sure you have a box grater and this is my favorite cheese brand to use!
  • Mayo. You can use whatever brand you like but I always have some Hellman’s in my fridge.
  • Pimentos. You’ll need a 4 ounce jar of pimentos. These are found in the grocery store near the roasted red peppers. You’ll drain the jar then dice the pimentos.
  • Seasonings: Garlic powder, salt, smoked paprika, cayenne pepper, black pepper, and chipotle powder. I love using the chipotle powder here and not just relying on the cayenne pepper for the heat. The chipotle adds an extra later of smoky flavor that really makes this something special!

WHAT TO SERVE WITH SPICY PIMENTO CHEESE

Here’s some ideas to serve with this dip!

  • Crunchy veggies like celery or carrot sticks
  • Cucumbers
  • Crackers
  • Chips
  • Bell peppers
  • Naan
  • Pretzels

Lately I’m loving eating it with some tortilla chips and cucumbers.

OTHER WAYS TO SERVE

I eat this most often just as a cheesy dip, but there’s a lot of other ways to enjoy pimento cheese. Here are some more ideas!

  • As a cold sandwich, how pretty would this be on some pumpernickel bread?!
  • On a grilled cheese, like my pimento grilled cheese
  • As a burger topping
  • In deviled eggs
  • Melted on chicken
  • On tater tots or a baked potato

A super simple cheese dip made spicy with the addition of cayenne pepper and chipotle powder! Whip this up in less than 10 minutes!

Ingredients

2 cups shredded sharp Cheddar cheese
1 jar of pimentos, drained and diced (4 ounce jar)
5 tablespoons of mayo
3/4 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon chipotle powder
1/8 teaspoon salt
Black pepper

Instructions

1. In a bowl combine the shredded cheese with the 5 tablespoons of mayo. Gently mash and stir to create a spread-like consistency. For an even smoother dip you can add an extra tablespoon of mayo and really mash cheese. Mix in the diced pimentos.

2. Add the garlic powder, smoked paprika, cayenne pepper, chipotle powder, salt, and a few dashes of pepper. Stir until everything is well combined.

Serve with crackers, celery, chips, cucumbers, or any of your favorite dipping ingredients!
