Puff Pastry Pizza

Pizza night gets a fun twist with puff pastry pizza! Use a sheet of puff pastry, add sauce and Mozzarella cheese to make an easy dinner or fun party snack. This is ready for the table in less than 30 minutes!

You’re going to love this recipe because it’s even easier than using pizza dough! There’s no having to stretch out dough and the flaky light texture of the puff pastry makes this a great idea to serve as a party appetizer. It’s got all the flavors of a cheesy pizza but a tad lighter!

INGREDIENTS AND KITCHEN SUPPLIES

Here’s what you’ll need from your fridge, pantry, and kitchen to make this pizza.

INGREDIENTS

  • Puff pastry. You’ll find this in the frozen food section of your grocery store and comes in a package of 2 sheets. This recipe used one sheet but you can easily double this to make 2 pizzas!
  • Egg + Water. Mix these to make the egg wash. That’s what helps give the puff pastry that beautiful golden brown color.
  • Pizza sauce. There’s some flexibility with this. You can used jarred pizza sauce, jarred marinara pasta sauce, or if you have leftover homemade sauce you can use that as well. You’ll only need 1/4 cup of sauce for this recipe.
  • Mozzarella cheese. Using a bag of shredded cheese here is fine.
  • Cornmeal. This really helps to give this a little bit of a pizzeria taste. Just sprinkle a little cornmeal on the pan before you add the puff pastry. It adds a little extra flavor but also a welcomed bit of texture to each bite.
  • Seasonings: Garlic powder, Italian seasoning, salt.

  • Baking sheet
  • Pizza cutter
  • Basting brush

HOW TO MAKE THE PIZZA

Now that you’ve got your ingredients and supplies, let’s make a pizza!

Prep the puff pastry. First sprinkle a little of the cornmeal on the baking sheet, then add one sheet of puff pastry on top, pressing down slightly so some of the cornmeal sticks to the bottom.

Prick the pastry sheet with a fork. The pastry is still going to puff up a lot during this prebake, but the fork pricks will allow some steam to escape while it’s baking.

Brush lightly with the egg wash. Don’t skip this step! It really helps the pastry develop a deep golden brown color. I also tested this using olive oil and I feel that the egg wash resulted in a better color and flavor.

Season. Sprinkle only the center area with some garlic powder, Italian seasoning, and salt. Avoid the exterior crust right now, I found if you add the garlic powder at this point it gets a little too charred after the second round of baking.

Prebake the pastry. Now pop this in the oven at 425 degrees for 10 minutes. Then, remove from the oven and gently press down to release the steam and flatten the pastry. Don’t press to hard, you don’t want it to flake and crumble apart.

Layer and bake. Now add the 1/4 cup of sauce and 3/4 cup of cheese. Sprinkle with a little more garlic powder and salt then bake at 425 degrees for 10 more minutes.

PIZZA MAKING TIPS

  • Keep it light on the sauce, I don’t recommend using more than the 1/4 cup. If you add too much liquid the puff pastry will get damp and soggy.
  • Keep toppings simple. You also don’t want to add toppings that would release excess liquid either.
  • This is not a great leftover meal since puff pastry really doesn’t reheat well. This is best served immediately!

TOPPINGS AND VARIATIONS

I kept this recipe simple as just a basic cheese pizza, but here are some ideas to change it up!

  • Add dollops of ricotta.
  • Use Alfredo sauce to make a white pizza.
  • Pepperoni.
  • Black olives.
  • Fresh spinach.
  • Mushrooms.
  • Pesto.

Ingredients

1 sheet of frozen puff pastry, thawed
3/4 cup shredded Mozzarella cheese
1 egg mixed with 1 tablespoon of water
1/4 cup pizza sauce or marinara sauce
1/2 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 tablespoon cornmeal
Salt

Instructions

1. Preheat your oven to 425 degrees.

2. Sprinkle 1/2 tablespoon of the cornmeal onto the baking sheet then top with the thawed puff pastry sheet, pressing down gently so the corn meal will adhere to the bottom of the pastry.

3. Use a fork to prick the center of the pastry sheet several times, this will help prevent too much puffing up during the blind bake. Brush the entire pastry lightly with the egg wash. Then sprinkle only the center of the pastry with the garlic powder, Italian seasoning, and a little salt.

4. Bake the puff pastry for 10 minutes. Remove from the oven and gently press down to release the remaining steam and flatten the pastry. Don’t press too hard, you don’t want it to flake and crumble apart. Just apply some gentle pressure and that should do the trick.

5. Add the pizza sauce leaving a small edge for the crust. Top with the cheese, then sprinkle the whole pizza including the crust with a little garlic powder and a sprinkle of salt.

6. Bake for 10 minutes.

Slice and serve immediately!
