Queso blanco nachos are smothered with a silky smooth white cheese sauce then topped with any of your favorite nacho toppings. Load these up on a baking sheet for a crowd-pleasing appetizer.
BEST CHEESE TO USE FOR QUESO BLANCO
To make white queso we’ll need to use white cheeses that melt smoothly and add the perfect amount of flavor to the nacho cheese sauce. For these recipe I used a sharp white Cheddar cheese and pepper jack cheese.
The recipe below notes that you want to “pack” the measuring cup for the 1/4 cup of Cheddar and the 3/4 cup of pepper jack. By packing the cup this will help make sure you’re really getting the full measurement of the cheese for the perfectly cheesy queso! If the measure cups are too loosely packed you won’t be getting enough cheese in the sauce, and no one wants that!
WHAT TOPPINGS TO USE ON THE NACHOS
Before we get to the toppings, first let’s talk chips. For these nachos that are covered in queso you’ll really want a sturdy chip that isn’t going to break easily or get to soggy. My favorite chips of Garden of Eatin’. I used a mix of their yellow corn and blue corn chips for this recipe! I like using two different colors of chips it really makes this look beautiful and inviting to just dig in!
For toppings, I kept this simple with only a few extra ingredients. I originally got the idea to make this recipe after being inspired by the white queso nachos at one of my favorite restaurants in Cape May, NJ…Mad Batter! Their recipe came topped with queso fresco, pico de gallo, and some extra peppers and onions. But you can really load this up into an ultimate nacho with toppings like:
- Chorizo
- Taco seasoned ground beef
- Rotisserie chicken
- Roasted corn
- Black beans
- Diced avocado
You can also turn up the heat and make it spicy by adding either cayenne pepper or chipotle powder!
To serve these for a party I recommend getting your largest baking sheet and lining it with some parchment paper. Spread out all your chips then just pour on the queso blanco and sprinkle on all the additional toppings! The parchment paper will make cleanup a breeze!

Ingredients
1/4 cup (packed) shredded white Cheddar cheese
3/4 cup (packed) shredded pepper jack cheese
1/2 tablespoon butter
1/2 tablespoon all purpose flour
1 clove of garlic, grated
1 and 1/4 cup light cream
1/4 teaspoon salt
1 bag corn chips (I used 1/2 of a bag of yellow corn chips and 1/2 of a bag of blue corn chips)
Nacho toppings I used
Crumbled queso fresco
Grated cotija
Pico de gallo
Diced red onion
Instructions
1. Add your chips to a large platter. I lined a baking sheet with parchment paper and used that.
2. To a large pan, melt the butter over medium heat and add the grated garlic. Cook for 1 minute, then whisk in the flour and cook for 30 seconds more.
3. Pour in the light cream and heat over medium to medium-low heat for 3 minutes to thicken. Add the salt.
4. Add in the Cheddar and pepper jack cheese a little at a time and whisk until completely smooth. This queso is slightly thicker, if you want it a bit thinner just add an additional 1/4 cup of the light cream.
5. Pour the queso blanco over the corn chips then add any nacho toppings you want. I kept mine simple and light with: queso fresco, cotija, pico de gallo, diced red onions.
