Mexican chicken burgers are tender ground chicken burgers generously seasoned with taco spices and topped with Mexican cheeses. Give these a try for your next burger night!
SEASONINGS FOR TACO BURGERS
I wanted to keep these easy for a weeknight dinner, so I used the packet of taco seasoning here! You can mix up your taco spice blend if you prefer, but for these burgers you’ll use:
- 1 packet of taco seasoning
- 1/4 teaspoon garlic powder
- 1/4 teaspoon chili powder
- 1/4 teaspoon cumin
Want them spicy? Add some cayenne pepper and really turn up the heat!
HOW TO KEEP GROUND CHICKEN TENDER
Ground chicken is very lean meat so unlike ground beef you won’t have the help of fats to keep the burger tender and somewhat juicy. So the way to avoid a dry and crumbly chicken burger is by adding some moisture into the mix.
I do this in various ways in some of my other chicken burgers, but for this recipe I add 3 teaspoons of fresh lime juice. The lime juice does the trick of keeping the burgers moist and also adds an extra kick of flavor!
Once you’ve gotten the ground chicken seasoned and formed into patties it’s time to get cooking! Add a few teaspoons of oil to a non-stick or cast iron pan. Once heated, add the patties and cook on one side for 6 minutes.
Flip the patties and press down a bit with your spatula and cook for an additional 5 minutes. At this point the burgers should be fully cooked with an internal temperature of 165 degrees.
If the temperature has not yet reached 165 then add a little water to the pan to create some steam and cover the pan with foil. Cook in additional 30 second increments until done.
I highly recommend getting yourself a digital meat thermometer! This is the thermometer I use, and it really helps prevent you from over or under cooking your meat!

I topped my burgers with queso fresco, cotija, crema, and lettuce. Here are some other ideas to make these epic burgers!

Ingredients
1 pound ground chicken
1 packet of taco seasoning
1/4 teaspoon garlic powder
1/4 teaspoon chili powder
1/4 teaspoon cumin
3 teaspoons lime juice
1 egg
1/2 cup panko breadcrumbs
1 tablespoon butter, softened
Oil for cooking the burgers
You will also need
4 brioche buns
Queso fresco
Cotija
Crema, sour cream, or chipotle aioli
Any additional burger toppings you’d like
Instructions
1. Combine the softened butter with 1 teaspoon of the taco spices from the packet. Brush this seasoned butter on the burger buns and set aside.
2. In a large mixing bowl combine the pound of ground chicken, the remaining taco spice packet, the garlic powder, chili powder, cumin, lime juice, egg and panko. Mix until everything is well combined. Form into 4 patties, creating a small indent in the center of each patty to prevent them from puffing up like a meatball when they cook.
3. To a large pan add a few teaspoons of cooking oil and heat over medium heat. Add the burger patties and cook on one side for 6 minutes.
4. Flip the burgers and gently press down with your spatula to flatten each burger. Cook for an additional 5 minutes. Burgers should be done at this point with an internal temperature of 165 degrees. If temperature is not reached add a tablespoon of water to the pan and cover with foil, cook in additional 30 second increments until the burgers are done.
5. Remove the burgers from the pan and place them on a plate, cover with foil. To the same pan over medium heat add the buttered buns face down. Cook for a few minutes until the buns are browned and toasted nicely.
Garnish your burgers with the cheeses, sauce of your choice, and any additional taco toppings you like!
