Tortellini soup is a soup that’s easy enough to make on a weeknight! A creamy tomato broth base with tender tortellini then loaded with crispy bacon and vibrant green peas.

INGREDIENTS
Here’s what you need to get this delicious soup on the table this week!
- Tortellini. You’ll need about 3 cups of fresh tortellini, the kind from the refrigerated section of the store. You can always add a bit more than 3 cups if you want!
- Bacon. Most tortellini soups have ground sausage and spinach, but I wanted to try a little something different! The salty bacon pairs SO well with the creamy tomato sauce. You can use 6-7 strips, cooked and crumbled small.
- Peas. Instead of the spinach lets use peas! To me their gorgeous vibrant green stands out more than spinach. I like to buy a bag of frozen peas, cook them, then use 1 cup in the soup.
- Tomato sauce. I used a 15 ounce can in here. Just use whatever brand you normally like. Got homemade sauce on hand? You can use that too!
- Light cream. I really love light cream, it’s not as thick as heavy cream and also doesn’t break apart easily like half & half can in hot sauces.
- Seasonings: Fresh garlic, pepper, Italian seasoning.
- Butter + flour to make the roux.

WHY YOU’LL LOVE MY TORTELLINI SOUP
If you need a little gentle convincing, here’s why you’ll love this recipe!
Quick and easy. Ok not like 10 minutes quick, but under 35 minutes which for a soup is pretty quick! There’s also nothing complicated or too complex here. In my opinion, cooking and crumbling the bacon is the most strenuous part. While the bacon is cooking you can prep the rest of the ingredients and get the soup going to really make the most of your time.
Hearty. This is the meal. You really don’t need to serve anything else with this because all your bases are covered in this one loaded soup. Carbs? Check. Salty and crunchy? Check. Veggies? Check! This soup will make you so full you don’t have room for any side dishes.
Great as leftovers. This really makes it a ‘weeknight win’ for me. When the dish is incredible the first night and reheats easily and tastes just as amazing the next day. Bring this for lunch in the office or reheat at home for a fast meal the next day.
Kid approved. You read that right. Want a way to get your kids to eat peas? Simple! Throw them in to a creamy tomato pasta soup and by the way there’s bacon in there to go with them! Add a little extra Parmesan cheese to help. My 9-year old loves this soup and yes she eats the peas!

STORAGE AND REHEATING LEFTOVERS
This soup makes a lot, which is great for helping your meals throughout the week. Store in the fridge and eat within 5 days for best freshness. For reheating you can either microwave for a few minutes until hot, or add your serving to a small sauce pot and heat on the stove.
For me the stove method works best for soups, it really brings back that “just made” temperature and consistency that I feel you don’t always get from the microwave.
