It can be fun and cost effective to recreate your takeout favorites at home! These copycat KFC Famous Bowls bring the comforting fast food dish to kitchen. This is an incredibly easy assembly type recipe with very minimal cooking needed to get a hearty dinner or lunch on the table.
INGREDIENTS
Here’s what you need to make these bowls! Feel free to use whatever brands you’d like, these are just what I chose for this recipe.
Mashed potatoes. You can make your own, or used leftovers if you have them. But I wanted to keep this low cook, low fuss! I use pouches of instant mashed potatoes often when I want to keep a weeknight dinner extra easy. You’ll need 2 pouches to get a 4 serving dinner.
Popcorn chicken. Since you’re making this at home you can load up your bowls with as much chicken as you want! For mine I did about 6 pieces per bowl.
Cheeses. The official KFC Famous Bowl calls for a blend of 3 shredded cheeses. Here I shredded some extra sharp Cheddar cheese and I had a bag of shredded Mozzarella.
Gravy. The KFC version uses a brown gravy. I’m more of a fan of chicken gravy so my recipe uses that! Feel free to use whatever your favorite gravy is: chicken, turkey, brown, beef.
Corn. I try and keep my freezer stocked with some frozen veggies, so frozen corn worked for me! If you prefer canned or fresh you can use that instead.
HOW TO ASSEMBLE THE FAMOUS BOWLS
I call this an “assembly” recipe because there really isn’t any a lot of cooking required…but you KNOW this will be a big hit on a busy weeknight when you want something you prepared but also need to quick, easy, and inexpensive.
Step 1. Preheat the oven and bring a pot of water to boil for the instant potatoes. When the oven is preheated bake the popcorn chicken according to your package instructions.
Step 2. While the chicken is cooking, make the instant mashed potatoes, microwave the frozen corn, heat the gravy, shred the cheese if needed.
Step 3. Assemble! Start with a layer of potatoes, then corn, then chicken, the cheeses, then lastly pour the gravy.
And just because I was feeling fancy I added some chopped chives. That’s not in the KFC version but something about adding some chopped greens over a beige dish just makes it a bit more appetizing for me.
See how easy that is! This literally will take less than 20 minutes and you’ve got a hearty filling dinner, and maybe even enough for some leftovers.
