Rich triple chocolate muffins made with dark chocolate cocoa powder, melted dark chocolate, and dark chocolate chunks.

Ingredients

1 and 3/4 cup all purpose flour
1 cup white sugar
1/2 cup sour cream
2 eggs
1/2 cup dark cocoa powder
1/2 cup vegetable oil
1/2 cup light cream
1/2 cup dark chocolate morsels
2 bars of dark chocolate, chopped (bars should be 3.5oz each and between 70%-78% cocoa)
4 tablespoons of butter, melted
1 teaspoon vanilla extract
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt

Instructions

1. Preheat oven to 350 degrees. Line a muffin tin with wrappers.

2. In a small pot melt the butter over low heat then stir in the chocolate morsels. Remove from heat and pour into a large bowl. Alternate mixing in the 1 cup of white sugar and the 1/2 cup of oil, then stir in the the eggs, vanilla, light cream, and sour cream.

3. In a different large bowl mix the flour, baking soda, baking powder, salt, and cocoa powder.

4. Slowly mix in the dry ingredients then lastly pour in the chopped dark chocolate.

5. Add to the prepared muffin tin, filling to the top of the muffin liner, then bake for 23 minutes.
