Strawberry Spinach Salad with Goat Cheese is a light and fresh salad perfect for lunch or dinner. The strawberries add a sweet burst of flavor, while the toasted walnuts add warmth and crunch. Make this in 10 minutes!

Ingredients

Baby Spinach
Romaine Lettuce
1 cup of diced strawberries
1 cucumber, peeled and seeds removed then diced
1 cup of chopped walnuts
4oz crumbled goat cheese
Vinaigrette dressing, like balsamic vinaigrette

Instructions

1. Heat your oven to 350 degrees. Pour 1 cup of chopped walnuts on a foil-lined baking sheet and bake for 10 minutes.

2. While the walnuts are toasting, dice the strawberries so you have 1 cup of diced strawberries. The number of strawberries needed to get one cup of diced will depend on how large your strawberries are. Peel and remove the seeds of one large cucumber, then dice. You can also buy a seedless cucumber to skip the step of having to deseed the traditional cucumber.

3. Assemble your salad by mixing equal parts of baby spinach and romaine lettuce, top with strawberries, cucumbers, toasted walnuts and crumbled goat cheese. Drizzle your dressing over top, then enjoy!

Notes

Don’t like goat cheese? Substitute crumbled feta cheese!
