You will need 12oz feta, 6oz sour cream, 2 tablespoons lemon juice, 1 teaspoon lemon zest, 1 garlic clove grated, and a dash of extra virgin olive oil.
Blend the feta and the sour cream in a food prossecor.
Add the lemon juice, lemon zest, grated garlic, and olive oil.
Blend again until smooth. There will still be some visible texture from the feta, but overall will be creamy.
Serve right away, or chill in the fridge for 1-2 hours for extra firmness.
