Veggie Twice Baked Potatoes

You'll need potatoes, cheese, corn, peppers, broccoli, cream cheese, butter and seasonings.

Ingredients

Cook the potatoes then scoop the softened potato and add to a bowl.

Method

Add the roasted veggies to a bowl with the potatoes, butter, and cream cheese.

Method

Fill the potato skins and top with extra cheese. Bake at 350 degrees for 25 minutes.

Method

Service with sour cream or ketchup and enjoy!
