Corn and Red Pepper Quesadillas
Flour tortillas 1 tablespoon extra virgin olive oil 1 15oz can of corn, drained 2 red peppers, diced 1/2 of a large white onion 1/2 tsp salt 1/4 teaspoon garlic powder 1/4 teaspoon cayenne pepper 1/8 teaspoon black pepper 1 8oz block pepper jack cheese, grated 1 lime, cut into wedges
How to make the quesadillas
Toast one side of the tortilla.
Top with another tortilla.
Flip, top with cheese and corn mix.
Flip again, cook then slice.
